   很多人都喜欢吃辣的,所以啊,您一定得来咱四川尝尝这地地道道的老四川火锅。四川的火锅汤底是非常有讲究的。这个火锅的汤底需要用小火熬制6个时辰才能熬出白骨汤。然后厨师需要精心挑选7种辣椒以及花椒粒反复翻炒为止,后将白骨汤头倒入炒好的辣椒中。这便是四川火锅汤底的制作过程了。火锅也分很多种呢,有白汤,红汤,鸳鸯锅,四宫格,九宫格等等。其中九宫格的吃法最为讲究。九宫格顾名思义分数九个格子,位于最中心的格子为中心格,火力是最旺盛的一格,适合烫一些脆而易熟的食物,毛肚、鸭肠、鹅肝之类的在这个锅里只要滚烫个8-15秒,鲜嫩爽脆,口感清新。十字格的火候次之,是为中火,可以放麻辣牛肉、黄喉、以及丸子等食材,2-10分钟的烹饪能够很好地锁住食材的原汁原味。四方格的火候可以说是文火,脑花、鸭血、肥肠,20分钟以上,软糯入味。在结束后可以适当地在中心格里烫一些喜欢的青菜,解解腻。

    Amazing article! I knew that 四川 is well-known for their spicy food/dishes but I didn’t know that 火锅 is a 四川美食. If I get a chance to go to 四川, I will definitely try their 老四川火锅.

    I really like that you put different types of hot pots. I never knew that there were different kinds! The one that I’m most familiar with is shabu-shabu. I also like the methods of cooking the food in Jiugongge, especially the 9 grids. I also liked that you listed all different kinds of foods that you could cook in the 9 grids.

    Hot pot is one of my favorite foods! I remember my whole family coming over on cold winter days, sitting around the kitchen table eating hot pot. Although I’ve never tried 四川 styled hot pot, it sounds delicious! I never knew how much effort it takes to just cook the broth.     Eating hot pot is pretty common in my family. But I never knew that hot pot originated from 四川. There are so many steps to prepare hot pot. Steps that my family never took (at least not with the soup base). Whenever I eat hot pot at a restaurant, I am always stunned by the amount of soup base choices available.

    What a great article. I’ve actually had hot pot many times. One of those times was in Xi’an with my host family at this famous place. I tried really spicy hot pot on our class trip that was so hot i almost cried a bit. I am sure that the hot pot in Sichuan is different and probably better!

    I love eating hot pot with my family. I’ve eaten it as long as I can remember. However, I never knew that hot pot was a Sichuan cuisine. Also, I didn’t know that hot pot has the representation in China of the “Culinary Heaven”. Furthermore, I never knew that there were many steps create the authentic old Sichuan hot pot.

    Having Hot Pot with my family is one of my favorite family traditions, but this Sichuan Hot Pot sounds pretty interesting and scrumptious as well. After reading this article, I discovered that the soup base has to be simmered in the pot for 6 hours, that’s longer than I expected. It sure sounds like a real spicy meal when it’s mentioned that the chefs select several different peppers to use. Apparently, there are several different soup types such as red soup, white soup, shabu-shabu, 四宫格, 九宫格, etc. I found the 九宫格 variant of soup to be the most interesting, as the pot is divided into 9 separate grids with the center one being the most powerful and hottest. I found the types of meat mentioned such as intestines and brains sounding quite exotic but delicious at the same time. Thank you for this informative article that’s left me hungry for more.

    Nice article, Tina! I think hotpot is a pretty common Chinese food. I would always eat it during the holidays, and sometimes even on a normal day. The first time I tried hotpot was with my Chinese class at a restaurant in Flushing, and it was quite a mouth-watering experience. It has uncovered a new level of flavors in my knowledge of food, and I was lucky enough to share in this dining experience with my exchange students in October of 2017 at HaiDiLao, a new chain of 四川火锅 restaurants in China.     Thanks so much for sharing this article. I have eaten hot pot before, once in China. However, I did not know so much about it. First off, I did not know that hotpot was a Sichuan cuisine. In addition, I found it very interesting that in order for the white bone soup to be extracted, the soup base needs to be simmered for 6 hours, I found this very interesting. I also found it very interesting how many different types of hot pot that there are; I was not aware of this whatsoever. In addition, I find it very interesting that hotpot allows for those who eat it to decide how they want there food to be cook; different from a typical American restaurant where they prepare and cook the food in the kitchen, hotpot allows for the customers to make the decisions. In my opinion, hotpot is a great way to have a nice meal, hangout with friends and family, and generally have a fun time at a restaurant!

    This article on hotpot is really great! Hotpot is really a stepping stone for many Americans into the Asian cuisine. It has many special occasions and should be experienced by everyone at least once in their life. At Jericho, I’ve been fortunate enough to go on 2 hotpot trips with Mrs. Song and our class and experience great foods. Learning about hotpot really gives me a reason to appreciate the food that I eat more often rather than just eating it without thinking.

    Ever since I was a baby, I have eaten hot pot. it was like a tradition for every special occasion. It is my mom’s favorite thing to eat, and I inherited it.     This is a great article and you really get in depth about hotpot. Hotpot is one of my favorite things to do because you can hangout with your family and talk without being distracted from cooking, and the food still taste delicious. I have been to sichuan and tried their style of hotpot and I can say from experience that their hotpot and the one I have in the US have to completely different taste. Although I can not handle that much spice so when I did order the broth in sichuan I got the one without spice which kind of takes away from the flavor of the broth.
