Food Differences Across China

Even within the country, China has its fair share of cultural differences, just like any large nation. One notable difference between China’s regions is the food. In fact, depending on where in China you travel to, you may end up eating two entirely different cuisines altogether!

In northern China, the cooler weather resulted in the increased cultivation of wheat and grains; for this reason, wheat and flour are staples of northern Chinese cuisine. Foods such as noodles, dumplings, pancakes, and steamed as well as stuffed buns, are all commonly eaten in this region. The food in northern China also tends to be saltier. Surprisingly, rice, popular as it may be throughout the rest of Asia, has limited influence in the north.

In stark contrast with northern China, southern Chinese cuisine is based strongly around rice and rice-based products, such as congee (a type of porridge). With a warm and wet climate, these provinces host the optimal conditions required for the planting and harvesting of rice. Southern food also tends to be rich in flavor, with a heavy emphasis on fresh ingredients. Along the eastern and southeastern coasts, sweeter dishes are dominant, while in the southernwestern interior, spicy and sour foods prevail.

Although northern and southern China are home to the two main cuisines in the country, there are many more minor cuisines throughout, as well as subdivisions (such as the southeast) of the previously mentioned northern and southern foods. For example, central China is well-known for its extremely spicy food, and the food of northwestern China takes influence from halal food due to its close geographical proximity to Central Asia and its high Muslim population.
